- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat for about 2 minutes, or until shimmering.
- Add 1 pound of ground beef to the skillet. Cook for 5-7 minutes, stirring occasionally, until browned.
- Push the beef to one side of the skillet. Add 3 cloves of minced garlic and sauté for 1 minute.
- Sprinkle in 1 tablespoon of onion powder and 1 tablespoon of Cajun seasoning. Stir for 30 seconds.
- Pour in 1 cup of uncooked long-grain white rice and 2 cups of beef broth. Stir to combine.
- Once boiling, reduce the heat to low, cover the skillet, and let it simmer for 18-20 minutes.
- Turn off the heat and add 1 cup of shredded cheddar cheese and ½ cup of grated parmesan cheese.
