  • 1 cup Long-Grain White Rice (uncooked) brown rice or quinoa can be substituted
  • 2 tablespoons Olive Oil can be swapped with canola or vegetable oil
  • 3 cloves Garlic (minced) fresh garlic is preferable
  • 1 tablespoon Onion Powder fresh onions can be used for more flavor
  • 1 tablespoon Cajun Seasoning mix of paprika, garlic powder, onion powder, and cayenne works as a substitute
  • to taste Salt
  • to taste Pepper
  • 2 cups Beef Broth vegetable broth is a lighter alternative
For the Cheesy Sauce
  • 1 cup Cheddar Cheese (shredded) can use any melty cheese like Monterey Jack
  • ½ cup Parmesan Cheese (grated) Pecorino Romano can be used for a sharper taste

Method
 

Step-by-Step Instructions
  1. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat for about 2 minutes, or until shimmering.
  2. Add 1 pound of ground beef to the skillet. Cook for 5-7 minutes, stirring occasionally, until browned.
  3. Push the beef to one side of the skillet. Add 3 cloves of minced garlic and sauté for 1 minute.
  4. Sprinkle in 1 tablespoon of onion powder and 1 tablespoon of Cajun seasoning. Stir for 30 seconds.
  5. Pour in 1 cup of uncooked long-grain white rice and 2 cups of beef broth. Stir to combine.
  6. Once boiling, reduce the heat to low, cover the skillet, and let it simmer for 18-20 minutes.
  7. Turn off the heat and add 1 cup of shredded cheddar cheese and ½ cup of grated parmesan cheese.
  8. Taste and adjust the seasonings with salt and pepper as needed.
