- Preheat the oven to 375°F (190°C).
- Unroll the crescent roll dough onto an ungreased cookie sheet, keeping triangles spaced apart.
- Place a slice of deli roast beef and a piece of provolone cheese on the wide end of each triangle.
- Roll up each crescent from the wide end towards the narrow point, tucking in the edges as you go.
- Bake for 13–15 minutes, or until golden brown and flaky.
- Prepare the Au Jus gravy according to the package directions.
- Serve warm with Au Jus for dipping.
