  • ½ pound Ground Pork or tofu/ground chicken for vegetarian
  • 2 cloves Garlic minced, fresh is best
  • 1 tablespoon Ginger minced, or powder if needed
For Toppings
  • 2 Green Onions chopped
  • Chopped Peanuts for crunch
  • Fresh Vegetables e.g., bok choy, cucumbers

Method
 

Step-by-Step Instructions
  1. Bring a large pot of water to a rolling boil. Add fresh noodles and cook according to package instructions, about 3-5 minutes until al dente. Drain and rinse with cold water.
  2. Heat vegetable oil in a large skillet over medium heat, and cook ground pork for 5-7 minutes until browned.
  3. Add minced garlic and ginger to the skillet, cooking for 1-2 minutes until fragrant and golden.
  4. Lower the heat to medium-low, and add soy sauce, sesame paste or peanut butter, chili oil, and rice vinegar. Stir until smooth.
  5. Add cooked noodles to the skillet, tossing gently to combine with meat and sauce for about 2 minutes.
  6. Mix in Sichuan peppercorns, taste, and adjust spice level if needed.
  7. Serve noodles in bowls, garnished with chopped green onions, fresh vegetables, and chopped peanuts.
