Step-by-Step Instructions
  1. Prep Apple Filling: Peel, core, and slice apples. Melt butter, add apples, brown sugar, cinnamon, and nutmeg. Cook until fork-tender, stir in cornstarch slurry, and cool.
  2. Make the Crust: Preheat oven to 350°F. Mix graham cracker crumbs, sugar, cinnamon and melted butter. Press into a 10-inch springform pan and bake for 7-8 minutes.
  3. Cheesecake Filling: Beat cream cheese and sugar until smooth, add sour cream and vanilla. Mix in eggs one at a time, then cornstarch until just combined.
  4. Assemble Layers: Pour half cheesecake filling over crust, layer apple filling, then top with remaining cheesecake batter.
  5. Add Crumble Topping: Mix oats, flour, brown sugar and melted butter; sprinkle evenly over cheesecake layers.
  6. Bake: Lower temperature to 300°F and bake for about 60 minutes. Center should jiggle slightly. Cool in oven 1-2 hours.
  7. Chill: Refrigerate for at least 5 hours or overnight before removing from the springform pan and serving.
