Method
 

Pancake Preparation
  1. In a large mixing bowl, sift together the flour, cocoa powder, baking powder, and salt. Set aside.
  2. In a separate bowl, whisk the eggs and sugar, then add milk, oil, and vanilla. Stir until blended.
  3. Combine the wet mixture with the dry ingredients, folding gently until just moistened.
  4. Preheat and lightly grease a griddle. Pour 1/4 cup of batter for each pancake, cooking until bubbles form.
  5. Flip and cook until both sides are golden brown, keeping pancakes warm.
Ganache Preparation
  1. In a microwave-safe bowl, heat the chocolate and heavy cream in 30-second intervals until melted and smooth.
