Dough Preparation
- In a medium bowl, whisk together the dry ingredients until evenly mixed. Set this aside while you prepare the wet ingredients.
- In a stand mixer, beat together the butter and sugars until light and fluffy, then add vanilla and eggs, mixing well after each addition. Blend in molasses.
- Gradually add the flour mixture to the wet ingredients, mixing until just combined. Cover and chill the dough in the refrigerator.
- Preheat your oven to 350°F. Roll the chilled dough into balls, flatten slightly, and place on baking sheets. Bake until puffy and lightly golden.
- Let the cookies cool on sheets for about 5 minutes before transferring them to a wire rack.
- Beat the cream cheese with butter and vanilla until creamy. Gradually mix in confectioners' sugar, then add lemon juice and zest.
