Preparation
- Preheat your oven to 375°F (190°C). Combine spelt flour and cold, cubed unsalted butter in a mixing bowl and blend until coarse crumbs form. Press into a pie dish and blind-bake for 15-20 minutes.
 - In a separate bowl, whisk together apple butter, eggs, and heavy cream. Add cinnamon and nutmeg, adjusting to taste. Whisk until smooth.
 - Pour the apple butter filling into the cooled crust, smoothing the top with a spatula.
 - Bake at 350°F (175°C) for 35-40 minutes until edges are puffed and center wobbles slightly.
 - Allow to cool completely at room temperature, then refrigerate for at least 6 hours.
 - Serve chilled or at room temperature, optionally garnished with maple whipped cream.
