  • 1 cup Apple Butter homemade or store-bought
  • 3 large Eggs provide structure
  • 1 cup Heavy Cream dairy alternatives can be used
  • 1 teaspoon Cinnamon adjust as needed
  • 1/4 teaspoon Nutmeg adjust as needed
For the Crust
  • 1 cup Spelt Flour or all-purpose flour
  • 1/2 cup Unsalted Butter cold and cubed
Optional Topping
  • 1 cup Maple Whipped Cream for garnishing

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Combine spelt flour and cold, cubed unsalted butter in a mixing bowl and blend until coarse crumbs form. Press into a pie dish and blind-bake for 15-20 minutes.
  2. In a separate bowl, whisk together apple butter, eggs, and heavy cream. Add cinnamon and nutmeg, adjusting to taste. Whisk until smooth.
  3. Pour the apple butter filling into the cooled crust, smoothing the top with a spatula.
  4. Bake at 350°F (175°C) for 35-40 minutes until edges are puffed and center wobbles slightly.
  5. Allow to cool completely at room temperature, then refrigerate for at least 6 hours.
  6. Serve chilled or at room temperature, optionally garnished with maple whipped cream.
