Step-by-Step Instructions
  1. Heat a large skillet over medium heat and add olive oil, allowing it to warm for about a minute.
  2. Add diced potatoes to the skillet and cook for 8-10 minutes, stirring occasionally until golden brown.
  3. In the same skillet, add more olive oil if needed, then sauté chopped onions and bell peppers for 3-4 minutes.
  4. Add minced garlic and cook for an additional minute, stirring constantly.
  5. Add ground turkey, breaking it apart and cooking for about 6-8 minutes until browned.
  6. Sprinkle in smoked paprika, dried thyme, salt, pepper, and optional red chili flakes; stir for 1-2 minutes.
  7. Return cooked potatoes to the skillet, mixing gently and letting it cook for another 2-3 minutes.
  8. Remove from heat and garnish with freshly chopped parsley before serving.
