Preparation
- Pat your sirloin or ribeye steak dry with paper towels. Rub with olive oil and season with salt, black pepper, garlic powder, and smoked paprika. Let rest for 20 minutes.
- Preheat your grill or grill pan to high heat, around 450°F to 500°F. Add olive oil if using a grill pan.
- Slice zucchini into rounds or planks, brush with olive oil, and sprinkle with salt. Grill for 2–3 minutes per side until tender.
- Grill seasoned steak for 4–5 minutes per side for medium-rare, or until a meat thermometer reads 130°F. Let rest for 5 minutes.
- Prepare cooked grains according to package instructions. Fluff with a fork once cooked.
- In a bowl, mix sour cream or Greek yogurt with Dijon mustard, garlic powder, smoked paprika, and salt. Stir until smooth.
- Assemble the bowl starting with grains, then layer with grilled zucchini and sliced steak. Drizzle creamy sauce over the top.
