Method
 

Step-by-Step Instructions
  1. Begin by preheating your grill pan or outdoor grill to medium-high heat, around 375°F (190°C).
  2. Slice your halloumi into thick pieces, roughly ½ inch wide, and brush both sides with olive oil.
  3. Place the halloumi slices on the hot grill and cook for 2-3 minutes until golden, then flip and grill another 2-3 minutes.
  4. In a large mixing bowl, combine salad greens, sliced cucumbers, and halved cherry tomatoes; toss gently.
  5. In a small bowl, whisk together the remaining olive oil, lemon juice, sea salt, and black pepper until well-emulsified.
  6. Remove the grilled halloumi from the grill and add it to the salad; drizzle the dressing and toss gently before serving.
