  • 1 lb Ground Chicken or ground turkey as an alternative
  • 1 cup Panko Bread Crumbs or regular breadcrumbs
  • 1/2 cup Grated Parmesan Cheese or Pecorino Romano
  • 1/2 cup Milk chicken broth can be used
  • 2 large Eggs beaten lightly
  • 3 cloves Minced Garlic or roasted garlic for milder flavor
  • 1 tbsp Olive Oil any neutral oil can replace
  • 1 tsp Dried Italian Seasoning mixed oregano, basil, and thyme
  • Salt to taste
  • Black Pepper to taste
  • 1/4 cup Chopped Fresh Parsley or fresh basil or cilantro
For the Topping
  • 2 tbsp Melted Butter or olive oil for a lighter option
  • 1/2 tsp Garlic Powder
  • 1/2 cup Chicken Broth use low-sodium or homemade

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, whisk together milk and beaten eggs until smooth.
  2. Incorporate panko bread crumbs, grated Parmesan, dried Italian seasoning, salt, and pepper into the wet mixture.
  3. Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1-2 minutes.
  4. Fold sautéed garlic and chopped parsley into the dry ingredient mixture.
  5. Gently add ground chicken to the mixture and combine until just mixed.
  6. Preheat oven to 350°F (175°C).
  7. Transfer the mixture into a greased loaf pan, shaping it into a loaf.
  8. In a small bowl, mix melted butter and garlic powder for the topping.
  9. Generously brush the garlic butter mixture over the formed meatloaf.
  10. Pour chicken broth around the meatloaf before baking.
  11. Bake for 60-70 minutes or until the internal temperature reaches 165°F (74°C).
  12. Let the meatloaf rest for 10-15 minutes, then serve warm.
