  1. Cut the sirloin or ribeye into bite-sized cubes, roughly 1 inch each. Pat dry with paper towels and season with salt and pepper.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add steak bites in a single layer and sear for 2-3 minutes on each side until golden brown.
  3. Lower the heat, melt 1 tablespoon of unsalted butter, and add 3 minced garlic cloves. Sauté for 30 seconds until fragrant. Toss in the seared steak bites.
  4. In a separate saucepan, melt another tablespoon of unsalted butter, add an additional minced clove of garlic, and sauté for 30 seconds. Pour in 1 cup of heavy cream and bring to a gentle simmer. Gradually whisk in 1 cup of Parmesan cheese until smooth.
