  • 1 pound Sirloin Steak Can substitute with ribeye

Potatoes
  • 1 pound Baby Potatoes Yukon Gold or Russets work well
  • 2 tablespoons Olive Oil Can substitute with vegetable oil
Garlic Butter Sauce
  • 4 tablespoons Butter Unsalted is best
  • 4 cloves Garlic Fresh minced
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Rosemary
Optional Garnish
  • 2 tablespoons Fresh Parsley Chopped for garnish

Method
 

Step-by-Step Instructions
  1. Begin by bringing a large pot of salted water to a boil. Add quartered baby potatoes and cook for about 12-15 minutes, or until fork-tender. Drain and set aside.
  2. After the potatoes have cooled, gently smash each one with a fork. Drizzle olive oil over the smashed potatoes and sprinkle with salt and pepper. Set aside.
  3. Pat the sirloin steak bites dry with paper towels. Season with salt and pepper. In a skillet, heat olive oil over high heat until shimmering. Cook the steak bites for 2-3 minutes per side until golden brown.
  4. Remove the cooked steak bites from the skillet and set aside. In the same skillet, place the smashed potatoes cut-side down and cook for about 4-5 minutes until crispy. Flip and cook the other side for an additional 4 minutes.
  5. Lower the heat and add butter and minced garlic to the skillet. Stir until the butter melts and the garlic becomes fragrant.
  6. Return the seared steak bites to the skillet, tossing everything together for 1-2 minutes until well-coated in the garlic butter sauce.
