  • 1 cup Beef Broth can replace with vegetable broth for vegetarian option
  • 3 tbsp Butter use dairy-free butter if avoiding dairy
For the Vegetables
  • 4 cups Fresh Spinach can substitute with mushrooms for a vegetarian option
For Garnishing
  • 1/4 cup Parmesan Cheese or substitute with dairy-free cheese
  • 1/4 tsp Red Pepper Flakes adjust based on spice preference
  • Salt to taste
  • Black Pepper to taste

Method
 

Cook the Tortellini
  1. Bring a large pot of salted water to a rolling boil. Add tortellini and cook according to package instructions, usually 3 to 5 minutes for fresh, longer for frozen. Drain, reserving some pasta cooking water.
Brown the Ground Beef
  1. Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Add ground beef and cook for 6 to 7 minutes until browned.
Season the Beef
  1. Sprinkle in Italian seasoning, salt, black pepper, and red pepper flakes. Stir and cook for 1 to 2 minutes.
Create the Sauce
  1. Pour in beef broth, scraping the skillet to deglaze. Bring to a gentle simmer for about 3 minutes.
Stir in the Butter and Spinach
  1. Reduce heat to low, stir in butter until melted. Fold in spinach and cook for 1 to 2 minutes until wilted.
Combine Tortellini with Sauce
  1. Add drained tortellini to the skillet and toss to coat in the sauce. Cook together for another 1 to 2 minutes.
Serve with Garnish
  1. Plate the dish, sprinkle with Parmesan cheese and black pepper. Serve immediately.
