Preparation Steps
- In a large mixing bowl, combine the coleslaw mix, rinsed black beans, corn kernels, finely chopped jalapeño, diced red bell pepper, sliced green onions, and chopped fresh cilantro. Toss everything together gently until well mixed.
- In a medium bowl, whisk together the sour cream, mayonnaise, freshly squeezed lime juice, and chipotle sauce until smooth and creamy.
- Pour the creamy dressing over the prepared salad mixture. Gently fold the dressing into the salad until every piece is evenly coated.
- Just before serving, stir in most of the Chili Cheese Fritos, keeping a handful aside for garnishing.
- Transfer the Frito Cowboy Cabbage to a large serving bowl and top with the reserved Fritos. Garnish with an extra sprinkle of cilantro.
