Ingredients
  

For the Salad
  • 1 bag Coleslaw Mix can substitute with shredded green cabbage and carrots
  • 1 can Black Beans rinsed and drained
  • 1 cup Corn Kernels canned or fresh
  • 1 medium Jalapeño Pepper diced, seeds for extra heat
  • 1 medium Red Bell Pepper can substitute with orange or yellow
  • 2 medium Green Onions finely chopped, red onions can substitute
  • 1 cup Fresh Cilantro can substitute with parsley
For the Dressing
  • 1/2 cup Sour Cream Greek yogurt can be used
  • 1/2 cup Mayonnaise can use avocado mayo
  • 2 tablespoons Fresh Lime Juice can substitute with lemon juice
  • 2 tablespoons Chipotle Sauce for a milder version use smoked paprika and salsa
For the Seasoning
  • 1 packet Taco Seasoning homemade can be used
  • 1 teaspoon Ground Cumin can omit or replace with smoked paprika
For the Crunch
  • 1 bag Chili Cheese Fritos can use plain tortilla chips

Method
 

Preparation Steps
  1. In a large mixing bowl, combine the coleslaw mix, rinsed black beans, corn kernels, finely chopped jalapeño, diced red bell pepper, sliced green onions, and chopped fresh cilantro. Toss everything together gently until well mixed.
  2. In a medium bowl, whisk together the sour cream, mayonnaise, freshly squeezed lime juice, and chipotle sauce until smooth and creamy.
  3. Pour the creamy dressing over the prepared salad mixture. Gently fold the dressing into the salad until every piece is evenly coated.
  4. Just before serving, stir in most of the Chili Cheese Fritos, keeping a handful aside for garnishing.
  5. Transfer the Frito Cowboy Cabbage to a large serving bowl and top with the reserved Fritos. Garnish with an extra sprinkle of cilantro.

Notes

This salad is great for making ahead of time. Add Fritos just before serving to maintain crunch. Store leftovers separately without dressing for best texture.
