  • 1/2 cup balsamic vinegar substitute with red wine vinegar if desired
  • 2 tablespoons honey or brown sugar for sweetness
Salad
  • 6 cups baby spinach or arugula for a peppery kick
  • 1 cup fresh strawberries sliced
  • 1/2 cup blueberries optional; can substitute with diced ripe peaches
  • 1/2 cup feta cheese crumbled; or use goat cheese
  • 1/3 cup pecans optional; can substitute with almonds or walnuts

Method
 

Preparation
  1. In a small saucepan, combine balsamic vinegar and honey over medium heat. Bring to a gentle boil, then reduce heat and simmer for about 10 minutes, stirring occasionally.
  2. While dressing cools, wash and dry spinach, place it in a large bowl. Slice strawberries and add to the bowl with blueberries.
  3. Sprinkle crumbled feta over the spinach and fruit mixture, then add pecans and toss gently.
  4. Divide the salad into bowls, ensuring each portion has a vibrant mix of ingredients.
  5. Drizzle cooled balsamic dressing over each bowl before serving.
