Preparation
  1. Step 1: Prepare the Fish. Pat the white fish fillets dry with paper towels to ensure they cook evenly and develop a nice crust.
  2. Step 2: Make the Spice Rub. In a mixing bowl, combine chili powder, cumin, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
  3. Step 3: Season the Fish. Evenly coat the fish fillets with the spice mixture, ensuring a generous layer of seasoning.
  4. Step 4: Heat the Skillet. Heat a tablespoon of olive oil in a skillet over medium-high heat until shimmering.
  5. Step 5: Cook the Fish. Carefully place the seasoned fish fillets in the hot skillet. Cook for 3-4 minutes on one side, then flip and cook for another 3-4 minutes.
  6. Step 6: Rest and Flake the Fish. Once cooked, remove the fish from the skillet, let it rest, and then flake into bite-sized pieces.
  7. Step 7: Prepare the Lime Crema. In a mixing bowl, whisk together sour cream, mayonnaise, lime juice, and minced garlic.
  8. Step 8: Make the Slaw. Combine shredded cabbage, carrots, and red onion in a bowl and prepare the dressing.
  9. Step 9: Warm the Tortillas. Warm corn or flour tortillas in a dry skillet for 30-60 seconds on each side.
  10. Step 10: Assemble the Tacos. Layer the seasoned fish on each tortilla, followed by slaw and lime crema.
  11. Step 11: Serve Immediately. Serve with lime wedges on the side.
