  • 2 tbsp Greek Yogurt swap with sour cream if needed
  • 1 tbsp Olive Oil avocado oil is a great substitute
  • 1 lemon Lemon Zest & Juice lime can be used instead
  • 3 cloves Garlic, minced fresh is best, but garlic powder (1 tsp) works too
  • 1 tbsp Dried Oregano use fresh oregano for vibrant twist
  • 1 tsp Paprika consider smoked paprika for interesting depth
  • 1 tsp Garlic Powder optional if using fresh garlic
  • 1 tsp Kosher Salt sea salt is a suitable alternative
  • 1/2 tsp Black Pepper white pepper can replace it if preferred

Step-by-Step Instructions for Foolproof Greek Chicken Marinade
  1. In a medium-sized bowl or jar, combine 2 tablespoons of Greek yogurt, 1 tablespoon of olive oil, juice and zest from 1 lemon, 3 minced garlic cloves, 1 tablespoon of dried oregano, 1 teaspoon of paprika, 1 teaspoon of garlic powder, 1 teaspoon of kosher salt, and ½ teaspoon of black pepper. Whisk the mixture until smooth and well-blended.
  2. Place 2 pounds of chicken in a large zip-top bag or shallow dish. Pour the prepared marinade over the chicken, ensuring it’s evenly coated. Seal the bag tightly or cover the dish with plastic wrap. Gently massage the marinade into the chicken for a few minutes.
  3. Refrigerate the chicken coated in the marinade for at least 30 minutes; for optimum flavor, aim for up to 24 hours.
  4. Preheat your grill, oven, or stovetop pan to medium-high heat, around 375°F (190°C). Remove the chicken from the marinade and let any excess drip off.
  5. Cook the marinated chicken for approximately 6-8 minutes per side on the grill, or about 20-25 minutes in the oven, until it’s golden brown and the internal temperature reaches 165°F (75°C).
  6. Once cooked, remove the chicken from the heat and let it rest for about 5 minutes before slicing.

Notes
