- Whisk together ricotta, sugar, vanilla and almond extract in a medium bowl until smooth. Strain if desired.
- Fold almond flour, all-purpose flour, and baking powder into the ricotta mixture until just combined.
- Beat eggs and softened butter together, then add to dough, mixing until slightly sticky.
- Shape dough into 1-inch thick logs and cut into 1-2 inch pieces, shaping into pillows on a parchment-lined sheet.
- Preheat oven to 350°F (175°C). Bake pillows for 20-25 minutes until golden and puffed.
- Allow pillows to cool slightly and dust with powdered sugar. Garnish with sliced almonds if desired.
