  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Almond Extract optional
  • 1 cup Almond Flour
  • 1/2 cup All-Purpose Flour or gluten-free flour
  • 2 large Eggs at room temperature
  • 1/4 cup Softened Butter
  • 1 teaspoon Baking Powder
For the Finishing Touch
  • 1 cup Powdered Sugar for dusting
  • 1/4 cup Sliced Almonds optional topping

Preparation Steps
  1. Whisk together ricotta, sugar, vanilla and almond extract in a medium bowl until smooth. Strain if desired.
  2. Fold almond flour, all-purpose flour, and baking powder into the ricotta mixture until just combined.
  3. Beat eggs and softened butter together, then add to dough, mixing until slightly sticky.
  4. Shape dough into 1-inch thick logs and cut into 1-2 inch pieces, shaping into pillows on a parchment-lined sheet.
  5. Preheat oven to 350°F (175°C). Bake pillows for 20-25 minutes until golden and puffed.
  6. Allow pillows to cool slightly and dust with powdered sugar. Garnish with sliced almonds if desired.
