- Preheat your oven to 400°F (200°C).
- Drizzle a tablespoon of olive oil in a 13 x 9 inch baking dish.
- In your prepared baking dish, combine garlic, onion, salt, and red pepper flakes. Stir them together.
- Add the orzo, sun-dried tomatoes, olives, and lemon juice, then pour in the water and stir.
- Layer the spinach on top, optionally drizzle with sun-dried tomato oil.
- Bake for 15 minutes, then stir and return to the oven.
- Incorporate 1/2 cup of vegan Parmesan, smooth the top.
- Sprinkle the remaining 1/2 cup of vegan Parmesan on top and bake for another 12-15 minutes.
- Allow to cool slightly before serving.
