For the Greens and Cheese
  • 3 cups Fresh Baby Spinach Adds color and nutrients.
  • 1 tablespoon Oil from Sun-Dried Tomatoes Optional for added richness.
  • 1 cup Vegan Parmesan Divided.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Drizzle a tablespoon of olive oil in a 13 x 9 inch baking dish.
  3. In your prepared baking dish, combine garlic, onion, salt, and red pepper flakes. Stir them together.
  4. Add the orzo, sun-dried tomatoes, olives, and lemon juice, then pour in the water and stir.
  5. Layer the spinach on top, optionally drizzle with sun-dried tomato oil.
  6. Bake for 15 minutes, then stir and return to the oven.
  7. Incorporate 1/2 cup of vegan Parmesan, smooth the top.
  8. Sprinkle the remaining 1/2 cup of vegan Parmesan on top and bake for another 12-15 minutes.
  9. Allow to cool slightly before serving.
