Step-by-Step Instructions

  2. Combine boneless skinless chicken with lemon juice, olive oil, and fresh herbs in a medium bowl.
  3. In the prepared baking dish, add uncooked long grain white rice, grated zucchini, and chicken broth. Stir until combined.
  4. Place the marinated chicken evenly over the rice mixture.
  5. Cover the baking dish tightly with aluminum foil and bake for 40 minutes.
  6. Remove the foil and check if the rice is tender. Fluff the rice with a fork and serve topped with tzatziki sauce.
