For Rolling

Method
 

Preparation Steps
  1. Preheat your oven to 180°C (350°F) and grease your baking pan, preferably 9x13 inches or 11x7 inches.
  2. In a large mixing bowl, beat the room-temperature eggs and sugar together with an electric mixer for about 3-4 minutes.
  3. In a separate bowl, sift together the cake flour, baking powder, and salt then gradually fold the dry ingredients into your egg mixture, alternating with the milk.
  4. Pour your batter into the prepared baking pan and bake for 25-30 minutes, checking for doneness with a toothpick.
  5. While the cake cools, prepare the syrup by combining sugar, water, and food coloring in a saucepan and bringing it to a boil.
  6. Cut the cooled cake into squares or use a cookie scoop to shape them into balls.
  7. Dip each cake piece into the cooled syrup before rolling them in desiccated coconut.
  8. Let the finished Easy Snowballs rest briefly on a serving platter before enjoying.
