  1. Preheat your oven to 350°F (175°C) and prepare a greased 9x5-inch loaf pan.

  3. In another bowl, mix milk and lemon juice and let it sit for 5 minutes, then whisk in oil, vanilla, and eggs.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined to keep batter slightly lumpy.
  5. In a small bowl, mix melted butter, brown sugar, and cinnamon for the swirl.
