- Preheat your oven to 350°F (175°C).
- Cook the lasagna noodles according to package instructions until al dente, about 8-10 minutes.
- In a large pot over medium heat, warm olive oil. Add onion and garlic, sautéing until softened, about 3 minutes.
- Add zucchini, bell pepper, spinach, and mushrooms. Sprinkle in Italian seasoning, salt, and pepper, and cook for 5-7 minutes.
- In a mixing bowl, combine ricotta, 1 cup mozzarella, and ½ cup parmesan until creamy.
- Spread béchamel sauce in the baking dish. Layer noodles, half of the ricotta mixture, veggies, and a third of the béchamel. Repeat until ingredients are used.
- Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes.
