- Mix in corn, diced tomatoes, black beans, and rice. Add spices and heat through for 5 minutes.
- Prepare the bell peppers by cutting off tops and removing seeds. Microwave for 2-3 minutes to soften.
- Stuff each pepper with the beef mixture, topping with shredded cheese.
- Bake in the preheated oven for 20-25 minutes until the peppers are tender and cheese is bubbly.
