  • 1 cup Shredded Cheese cheddar, mozzarella, or blend

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and prepare a baking dish to hold the peppers.
  2. Brown the ground beef in a skillet over medium-high heat for 7-8 minutes, drain excess grease.
  3. Sauté diced onion for 5 minutes, then add minced garlic and cook for 1 more minute until fragrant.
  4. Mix in corn, diced tomatoes, black beans, and rice. Add spices and heat through for 5 minutes.
  5. Prepare the bell peppers by cutting off tops and removing seeds. Microwave for 2-3 minutes to soften.
  6. Stuff each pepper with the beef mixture, topping with shredded cheese.
  7. Bake in the preheated oven for 20-25 minutes until the peppers are tender and cheese is bubbly.
