- In a medium saucepan, whisk together 1 cup of water, your selected sweetener (brown sugar for regular, sugar-free sweetener, or maple syrup for the vegan version), ½ cup pumpkin puree, 1 teaspoon pumpkin pie spice, and a pinch of salt if desired.
- Place the saucepan over medium heat and stir continuously until the sweetener fully dissolves, which should take about 2-3 minutes.
- Once the mixture begins to simmer, reduce the heat to low and let it gently bubble for about 5 minutes, stirring occasionally.
- Remove the saucepan from the heat and quickly stir in 1 teaspoon of pure vanilla extract.
- Allow the pumpkin syrup to cool completely in the saucepan, which will take around 15-20 minutes, and then transfer it to an airtight container.
