Filling
  • 6 cups Bartlett Pears Ripe but firm
  • 1 cup Granulated Sugar Brown sugar can be used
  • 2 tablespoons Lemon Juice
  • 3 tablespoons Cornstarch Do not omit
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Cinnamon Adjust to taste
  • 1 teaspoon Nutmeg Adjust to taste
  • 1 teaspoon Ginger Adjust to taste
  • 1 teaspoon Cardamom Adjust to taste
  • 1 pinch Salt
Topping
  • 1 cup All-Purpose Flour Can use gluten-free
  • 1 cup Old-Fashioned Rolled Oats Quick oats can substitute
  • 1 cup Pecans Can use walnuts or omit
  • 1/2 cup Brown Sugar Granulated can be used
  • 1/2 cup Unsalted Butter Melted

Method
 

Preparation
  1. In a medium bowl, combine flour, oats, pecans, brown sugar, granulated sugar, cinnamon, and salt. Add melted butter and mix until resembling wet sand.
  2. In a large bowl, whisk together sugar, lemon juice, cornstarch, vanilla extract, and spices. Add sliced pears and toss to coat.
  3. Grease an 8x8 inch pan. Pour the pear mixture, spread evenly, then sprinkle the topping over the pears.
  4. Preheat oven to 425°F (220°C). Bake for about 30 minutes, until fruit bubbles and topping is golden brown. Rotate halfway.
  5. Remove from oven and cool for 15 minutes before serving.
