Preparation
  1. In a mixing bowl, combine flour, baking powder, sugar, and salt. Add milk, eggs, and vanilla extract, and mix until smooth. Let sit for 5 minutes.
  2. Preheat the griddle to medium heat and add a thin layer of oil.
  3. Cook sausage for 4-5 minutes until browned, then add hash brown potatoes and sauté for another 4-5 minutes.
  4. Pour a ladleful of pancake batter onto the griddle, cooking until edges set and bubbles form. Flip and cook for 1-2 more minutes.
  5. Whisk together eggs and a splash of milk, cook on low heat while stirring until fluffy. Add cheese if desired.
  6. Assemble the tacos by filling pancakes with hash browns, sausage, and scrambled eggs. Drizzle with syrup and fold.
