For the Chicken

  • 2 tablespoons Jerk seasoning Store-bought or homemade varieties.

For the Coconut Rice
  • 1 cup Coconut milk Essential for the rice.
  • 1 cup Long-grain white rice Brown rice can also be used.
  • 1 teaspoon Coconut oil For extra flavor.
For the Mango Salsa
  • 1 cup Mango Diced.
  • 1/4 cup Red onion Finely chopped.
  • 1/4 cup Fresh cilantro Or parsley as a substitute.
  • 1 tablespoon Lime juice Freshly squeezed is best.
  • 1 teaspoon Honey Agave syrup can be used for a vegan option.
  • 1/2 cup Corn kernels For added texture.

Method
 

Preparation Steps
  1. Preheat the grill or grill pan to medium-high heat (about 400°F or 200°C).
  2. In a medium bowl, combine jerk seasoning with other spices and mix well.
  3. Rub chicken with olive oil and sprinkle with spice mix, marinating for at least 30 minutes.
  4. Rinse rice under cold water and combine with coconut milk in a saucepan, simmering for 18-20 minutes.
  5. Fluff the rice with a fork after resting, stir in coconut oil.
  6. Prepare mango salsa by mixing diced mango, onion, cilantro, lime juice, honey, and corn together.
  7. Cook marinated chicken on the grill for 6-7 minutes on each side until fully cooked.
  8. Assemble bowls with a base of rice, topped with sliced chicken and mango salsa.
