- Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant, then add sliced zucchini. Cook for 4-5 minutes until tender yet still slightly crisp. Season with salt, pepper, and half of the Italian seasoning, then set aside.
- In a large mixing bowl, combine sautéed zucchini with cooked chicken, marinara sauce, and the remaining Italian seasoning. Mix until everything is well combined.
- Spread the chicken and zucchini mixture into the greased baking dish. Top with shredded mozzarella and grated Parmesan cheese.
- Bake uncovered for 25-30 minutes, until cheese is melted and golden brown.
- Remove from oven and let rest for about 5 minutes before serving. Garnish with parsley or basil if desired.
