Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant, then add sliced zucchini. Cook for 4-5 minutes until tender yet still slightly crisp. Season with salt, pepper, and half of the Italian seasoning, then set aside.
  3. In a large mixing bowl, combine sautéed zucchini with cooked chicken, marinara sauce, and the remaining Italian seasoning. Mix until everything is well combined.
  4. Spread the chicken and zucchini mixture into the greased baking dish. Top with shredded mozzarella and grated Parmesan cheese.
  5. Bake uncovered for 25-30 minutes, until cheese is melted and golden brown.
  6. Remove from oven and let rest for about 5 minutes before serving. Garnish with parsley or basil if desired.
