Ingredients
  

For the Meatballs
  • 1 lb Ground Beef can substitute with lamb, chicken, or turkey
  • 3 cloves Garlic minced
  • 1 Onion finely chopped
  • 1 cup Breadcrumbs gluten-free works too
  • 1 tsp Baking Soda for tenderizing
  • 1/4 cup Fresh Herbs any combination of parsley, mint, or coriander
  • 2 tbsp Olive Oil or neutral oil
  • to taste Salt
  • to taste Black Pepper
For the Bowls
  • 2 large Potatoes or sweet potatoes
  • 1 cup Tzatziki Sauce for drizzling
  • 2 cups Lettuce for base
  • 1 cup Tomatoes diced
  • 1 cup Cucumbers sliced
  • 1/2 cup Red Onion sliced
  • 1/2 cup Kalamata Olives pitted
  • 2 tbsp Lemon Juice for salad dressing
  • 2 tbsp Olive Oil for dressing

Method
 

Make the Meatballs
  1. In a large mixing bowl, combine ground beef, minced garlic, finely chopped onions, breadcrumbs, baking soda, and fresh herbs. Drizzle in olive oil, and season with salt and pepper. Mix thoroughly until well blended, cover with plastic wrap, and refrigerate for about 2 hours.
Bake Meatballs
  1. Preheat your oven to 425°F (220°C). Portion the chilled meat mixture into balls, roll smooth, and arrange on a parchment-lined baking sheet. Bake for 30 to 40 minutes until golden brown and cooked through.
Prepare Roasted Potatoes
  1. Wash and cut potatoes into wedges. Toss with olive oil, salt, and spices. Spread on baking sheet and roast in the oven for 40 to 60 minutes until crispy and golden.
Make Tzatziki Sauce
  1. In a medium bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, and a drizzle of olive oil. Stir in chopped herbs, cover, and refrigerate until serving.
Assemble the Bowl
  1. Layer lettuce in each bowl, followed by the salad mix, roasted potatoes, and meatballs. Drizzle with tzatziki sauce and sprinkle additional fresh herbs.
