Make the Meatballs

Bake Meatballs
- Preheat your oven to 425°F (220°C). Portion the chilled meat mixture into balls, roll smooth, and arrange on a parchment-lined baking sheet. Bake for 30 to 40 minutes until golden brown and cooked through.
Prepare Roasted Potatoes
- Wash and cut potatoes into wedges. Toss with olive oil, salt, and spices. Spread on baking sheet and roast in the oven for 40 to 60 minutes until crispy and golden.
Make Tzatziki Sauce
- In a medium bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, and a drizzle of olive oil. Stir in chopped herbs, cover, and refrigerate until serving.
Assemble the Bowl
- Layer lettuce in each bowl, followed by the salad mix, roasted potatoes, and meatballs. Drizzle with tzatziki sauce and sprinkle additional fresh herbs.
