Step-by-Step Instructions for Loaded Cucumber & Avocado Sandwich
  1. Begin by toasting your bread slices lightly in a toaster or on a skillet over medium heat for about 2-3 minutes until they're golden brown.
  2. In a small bowl, mash the ripe avocado with a fork until smooth, then add the lemon juice, salt, and pepper to taste.
  3. Take one slice of toasted bread and generously spread the mashed avocado mixture on one side.
  4. Layer the thinly sliced cucumbers on top of the avocado spread, arranging them in a circular pattern.
  5. On top of the cucumbers, place fresh leafy greens, thinly sliced red onions and cherry tomatoes, if using.
  6. Sprinkle the chopped fresh herbs over the top and drizzle with olive oil or your favorite sandwich spread, if desired.
  7. Carefully place the second slice of bread on top, avocado side down, and gently press to close.
