- Preheat your oven to 350°F (175°C).
- Combine the onion, carrots, celery, wild rice, and chicken broth in the baking dish. Stir to mix and cover with aluminum foil. Bake for 1 hour and 15 minutes.
- Melt 4 tablespoons of butter in a saucepan. Whisk in the flour, salt, and poultry seasoning. Gradually add the milk, whisking until smooth.
- Remove the baking dish from the oven, uncover, and add the chicken pieces. Pour the creamy sauce over and stir to combine.
- Melt the remaining 2 tablespoons of butter and toss the cubed bread in it. Sprinkle over the casserole.
- Increase oven temperature to 450°F (232°C) and bake uncovered for 20 to 30 minutes until chicken is cooked through and bread is golden brown.
- Allow to cool for a few minutes, season to taste, and serve.
