- Begin by placing almond butter in a microwave-safe bowl and heating it for 30 seconds until warm and easily stirrable.
- In a mixing bowl, combine the pumpkin puree, honey, almond butter, and pumpkin spice, stirring until fully smooth.
- In a small glass bowl, add chocolate chips and coconut oil, then microwave in 20-second increments until melted and glossy.
- Pour a thin layer of melted chocolate into molds and freeze for 10 minutes.
- Transfer pumpkin mixture into a plastic bag, snip a corner, and pipe it onto set chocolate.
- Cover pumpkin filling with remaining melted chocolate and freeze for 1-2 hours.
- Remove cups from molds and store in an airtight container.
