Equipment

  • Waffle Maker

Method

Step-by-Step Instructions for Brownie Waffle
  1. In a medium mixing bowl, combine 1/2 cup of peanut butter, 1 egg, 1/4 cup of unsweetened cocoa powder, 1/4 cup of monk fruit sweetener, and a pinch of salt. Mix well until you achieve a smooth, thick batter. If the mixture feels too thick, stir in 1-2 teaspoons of water until it reaches a scoopable consistency without being runny.
  2. Plug in your mini waffle maker and allow it to preheat according to the manufacturer's instructions, which usually takes about 3-5 minutes. Lightly spray the cooking surface with oil or non-stick spray.
  3. Once the waffle maker is hot, pour half of the brownie batter into the center of the hot surface. Sprinkle half of the sugar-free chocolate chips over the batter, then close the lid and cook for 2-3 minutes.
  4. Carefully open the waffle maker and use a fork or spatula to lift out the first brownie waffle. Let it cool slightly on a wire rack. Repeat the cooking process with the remaining batter.
  5. Once all your brownie waffles are cooked and slightly cooled, serve them warm, topped with sugar-free maple syrup or a pat of butter.
