  • 1/2 cup Red Onion Sliced, can soak in cold water
  • 2 tablespoons Fresh Dill Chopped, can substitute with fresh mint
  • 2 tablespoons Fresh Parsley Chopped, can substitute with cilantro
  • 1 cup Feta Cheese Crumbled, can use goat cheese instead
For the Dressing
  • 1/4 cup Extra Virgin Olive Oil High-quality for best taste
  • 2 tablespoons Lemon Juice Freshly squeezed
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Method
 

Preparation Steps
  1. Thinly slice cucumbers and red onion; soak onion in cold water for 10 minutes.
  2. Chop fresh dill and parsley, and add to cucumber and onion; toss gently.
  3. Crumble feta cheese over the mixture and fold gently.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. Drizzle dressing over salad and toss gently to coat.
  6. Let salad sit for 10-15 minutes to marry flavors.
  7. Serve chilled or at room temperature.
