- In a medium skillet over medium heat, melt 2 tablespoons of butter until liquid. Add ½ cup of panko breadcrumbs and toast them for 3-5 minutes until golden brown. Set aside to cool.
- Wash and dry 3 mini seedless cucumbers, slice them into ¼-inch rounds, and place in a large mixing bowl.
- Add ½ cup of freshly shaved Parmesan cheese and ½ cup of crumbled bacon to the cucumbers. Drizzle with ½ cup of Caesar dressing and toss until well combined.
- Sprinkle additional Parmesan cheese, bacon, and the toasted panko breadcrumbs over the top before serving.
