Ingredients
  

For the Chicken

  • 1 cup Panko Breadcrumbs Can swap with crushed whole-grain crackers for a healthier option.
  • 1/2 cup Parmesan Cheese Use grated or finely shredded for even coating.
  • 2 tablespoons Olive Oil Used for browning the chicken.
For the Vegetables
  • 4 cups Romaine Lettuce
  • 1 cup Cherry Tomatoes Optional for garnish.
For the Dressing
  • 1/2 cup Caesar Dressing Homemade variations can be made as well.
For the Bread
  • 4 slices Sourdough Bread Can substitute with whole-grain or gluten-free bread.
  • 2 tablespoons Butter Used for toasting the bread.
Seasonings
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a shallow dish, combine panko breadcrumbs and grated Parmesan cheese.
  3. Season both sides of chicken breasts with salt and black pepper.
  4. Coat the chicken breasts in the breadcrumb mixture.
  5. Heat olive oil in a skillet over medium-high heat and sauté chicken for about 3 minutes per side.
  6. Transfer chicken to a baking sheet and bake for 15-20 minutes until the internal temperature reaches 165°F (74°C).
  7. Butter one side of each slice of sourdough bread and grill until crispy and golden brown.
  8. Slice the cooked chicken into thin strips.
  9. In a bowl, toss chopped romaine lettuce with Caesar dressing.
  10. Layer the sandwich starting with grilled sourdough, followed by dressed romaine, sliced chicken, and optional cherry tomatoes.
  11. Close the sandwich and serve immediately while warm.
