Preparation
- Preheat your oven to 375°F (190°C).
- In a shallow dish, combine panko breadcrumbs and grated Parmesan cheese.
- Season both sides of chicken breasts with salt and black pepper.
- Coat the chicken breasts in the breadcrumb mixture.
- Heat olive oil in a skillet over medium-high heat and sauté chicken for about 3 minutes per side.
- Transfer chicken to a baking sheet and bake for 15-20 minutes until the internal temperature reaches 165°F (74°C).
- Butter one side of each slice of sourdough bread and grill until crispy and golden brown.
- Slice the cooked chicken into thin strips.
- In a bowl, toss chopped romaine lettuce with Caesar dressing.
- Layer the sandwich starting with grilled sourdough, followed by dressed romaine, sliced chicken, and optional cherry tomatoes.
- Close the sandwich and serve immediately while warm.
