  1. Begin by rinsing 2-3 Persian cucumbers under cool water. Slice them at an angle into oval-shaped pieces, about 1/8 inch thick.
  2. Sprinkle the cucumbers with 1/2 teaspoon of kosher salt and gently mix. Refrigerate for at least 20 minutes.
  3. Drain the cucumbers and rinse them under cold running water.
