Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Gather all your ingredients and equipment.
  2. Coarsely grate the sweet potatoes and place them into a large bowl of cold water; swirl to remove excess starch.
  3. Squeeze out as much moisture as possible from the grated sweet potatoes using a clean kitchen towel.
  4. In a mixing bowl, combine the drained sweet potatoes with onions, beaten eggs, flour, salt, and pepper.
  5. Heat a skillet over medium heat and add enough oil to coat the bottom.
  6. Scoop tablespoons of the sweet potato mixture into the skillet, flattening with a spatula to form patties.
  7. Cook undisturbed for about 3-4 minutes, or until the edges turn golden brown, then flip and cook the other side.
