Step‑by‑Step Instructions for Crispy Garlicky Pangrattato
- Begin by tearing stale bread into small chunks and placing them in a food processor. Pulse until you achieve coarse breadcrumbs.
- While your breadcrumbs are being prepared, mince or grate the garlic finely.
- In a medium frying pan, pour in about 3 tablespoons of extra virgin olive oil over low heat. Allow the oil to warm gently until fragrant.
- Add the minced garlic to the pan and sauté for about 1-2 minutes until golden and aromatic.
- Add the prepared breadcrumbs, rosemary, oregano, and fine salt into the pan. Stir well and cook over medium heat for 3-5 minutes until golden.
- Increase the heat to medium-high and stir continuously for 10-15 minutes until golden brown.
