  • 3 tablespoons extra virgin olive oil for frying
  • 3 cloves garlic minced or grated

  • 2 tablespoons fresh parsley finely chopped
  • 1 teaspoon dried oregano adjust to taste
For Seasoning
  • 1 teaspoon fine salt

Step‑by‑Step Instructions for Crispy Garlicky Pangrattato
  1. Begin by tearing stale bread into small chunks and placing them in a food processor. Pulse until you achieve coarse breadcrumbs.
  2. While your breadcrumbs are being prepared, mince or grate the garlic finely.
  3. In a medium frying pan, pour in about 3 tablespoons of extra virgin olive oil over low heat. Allow the oil to warm gently until fragrant.
  4. Add the minced garlic to the pan and sauté for about 1-2 minutes until golden and aromatic.
  5. Add the prepared breadcrumbs, rosemary, oregano, and fine salt into the pan. Stir well and cook over medium heat for 3-5 minutes until golden.
  6. Increase the heat to medium-high and stir continuously for 10-15 minutes until golden brown.
  7. Once the pangrattato has reached its perfect golden color, remove it from heat and transfer to a baking sheet to cool.
