  • 4 large Russet potatoes peeled and diced into 3/4-inch pieces
  • 3 tablespoons Olive oil or avocado oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Smoked paprika

For the Meat Mixture
  • 1 pound Ground beef or turkey 93/7 lean recommended
  • 1 tablespoon Chili powder
  • 1 teaspoon Cumin
  • 1 medium Red onion chopped
For the Toppings
  • 1 can Black beans rinsed
  • 1 cup Corn kernels fresh, canned, or frozen
  • 1 cup Shredded cheddar cheese or Mexican cheese blend
  • 1 cup Cherry tomatoes halved
  • 1 medium Avocado diced
  • 1/4 cup Fresh cilantro chopped
  • 2 pieces Lime wedges for serving
  • 1/2 cup Sour cream optional topping

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C). Peel and dice the russet potatoes into 3/4-inch pieces. Place them on a baking sheet, drizzle with olive oil, and season with garlic powder, onion powder, smoked paprika, salt, and pepper. Toss well and bake for 30–35 minutes, flipping halfway through.
  2. In a skillet over medium heat, cook the ground beef or turkey for 7–8 minutes, breaking it apart and stirring until browned. Drain any excess fat.
  3. Add chili powder, cumin, and chopped red onion to the meat. Stir and simmer for another 5 minutes until the onion softens.
  4. Stir in the rinsed black beans and corn, cooking for an additional 3–4 minutes. Adjust seasoning to taste.
  5. Divide the crispy potatoes among bowls and layer with the meat mixture, topping with shredded cheese while warm to allow melting.
  6. Top with halved cherry tomatoes, diced avocado, and chopped cilantro. Serve with lime wedges and optional sour cream.
