  • ¼ cup Olive Oil Avocado oil is a healthy substitute
  • 1 medium Lemon Juice Freshly squeezed
  • 1 medium Lemon Zest Optional but recommended
  • 1 tsp Garlic Powder Fresh minced garlic can be used
  • 1 tsp Onion Powder Shallot powder can be a unique twist

For Garnishing

Preparation Steps
  1. In a mixing bowl, combine ¼ cup of olive oil, the juice and zest of one lemon, 1 teaspoon of garlic powder, and 1 teaspoon of onion powder. Season with salt and black pepper to taste. Whisk until smooth.
  2. Cut boneless, skinless chicken breasts into uniform bites, about 1-inch pieces. Add the chicken to the marinade and toss until coated. Cover and refrigerate for 15 to 30 minutes.
  3. Preheat the air fryer to 380°F (193°C) for about 5 minutes.
  4. Remove the chicken from the refrigerator. Spray the air fryer basket with cooking spray. Arrange the chicken pieces in a single layer.
  5. Cook the chicken in the air fryer at 380°F (193°C) for 10 to 12 minutes, shaking the basket halfway through.
  6. Once cooked, let the chicken bites rest for a few minutes. Sprinkle with fresh parsley and serve with lemon wedges.
