Preparation

  2. Have udon noodles and sauce ingredients ready for easy access.
Cooking Steps
  1. Bring a large pot of water to a rolling boil and cook udon noodles for 4-6 minutes.
  2. Drain the noodles and rinse them under cold water. Set aside.
  3. In a skillet, heat vegetable oil and sauté garlic, shallot, and ginger for 3-5 minutes.
  4. Stir in tomato paste and Thai red curry paste, mixing well for 1-2 minutes.
  5. Add coconut milk and remaining sauce ingredients, simmer for 5 minutes.
  6. Incorporate spinach and cook for 2 minutes, then add udon noodles.
  7. Toss noodles in the sauce, cook for 1 minute, and stir in basil and black pepper.
