Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Wash, peel and slice the potatoes into 1/8-inch rounds.
  3. In a medium saucepan, melt the butter and sauté the onion until soft, then add garlic and thyme.
  4. Sprinkle in the flour, whisk in the milk, and cook until thickened; mix in cheese, nutmeg, salt, and pepper.
  5. Layer half of the potato slices in a buttered baking dish, then half of the sauce; repeat the process.
  6. Top with remaining cheese and cover with foil before baking.
  7. Bake for 45-60 minutes, then uncover for 15-20 minutes to brown.
  8. Let it rest for 10 minutes before serving.
