  • 1 tablespoon Olive Oil
For the Sauce
  • 1 pound Italian Sausage
  • 15 ounces Pumpkin Puree Pure pumpkin, not pie filling
  • 1 cup Heavy Cream Can use half-and-half or coconut milk
  • 1/2 cup Parmesan Cheese
  • 3 cloves Garlic Minced
  • 1/4 teaspoon Nutmeg Just a pinch
  • to taste Salt
  • to taste Pepper
For the Greens
  • 4 cups Fresh Spinach
  • to taste Fresh Parsley or Basil Optional garnish

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a rolling boil. Add the gnocchi and cook until they float, approximately 2-3 minutes. Drain and set aside.
  2. In a skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the Italian sausage, breaking it into crumbles. Cook until browned, about 5-7 minutes. Remove from skillet.
  3. In the same skillet, reduce heat to medium and add minced garlic. Sauté for 1 minute until fragrant. Mix well.
  4. Lower heat to medium-low, add pumpkin puree and heavy cream, stirring until bubbling, about 2-3 minutes. Add Parmesan cheese, nutmeg, salt, and pepper, stirring until smooth.
  5. Add cooked gnocchi and fresh spinach to the sauce, toss gently until coated, about 2 minutes.
  6. Return sausage to the skillet and stir until heated through, about 2 minutes.
  7. Serve immediately, garnished with fresh parsley or basil if desired.
