Step‑by‑Step Instructions for Peanut Butter Rice
  1. Rinse 1 cup of long-grain rice under cold running water until the water runs clear, about 2-3 minutes. Drain thoroughly.
  2. In a medium-sized saucepan, combine the rinsed rice with 1 teaspoon of onion powder, 1 teaspoon of garlic powder, 1 teaspoon of smoked paprika, and a pinch of cayenne. Stir gently to coat the rice with spices.
  3. Add 1 ¾ cups of vegetable stock and 2 tablespoons of soy sauce to the saucepan. Stir well to ensure the rice is submerged.
  4. Bring to a lively simmer over high heat with small bubbles forming. Lower the heat and cook gently for 13 minutes.
  5. Remove from heat and let it steam covered for an additional 10 minutes to absorb moisture.
  6. Fluff the rice with a fork and mix in 2-3 tablespoons of peanut butter until evenly coated and melted.
  7. Serve warm alongside sautéed greens or protein. Store leftovers in an airtight container for up to five days.
