For the Sauce
  • 1 tablespoon Butter or margarine
  • 3 cloves Garlic, minced fresh for best flavor
  • 1 cup Chicken broth or vegetable broth
  • 1/4 cup Lemon juice fresh is crucial
  • 1 teaspoon Lemon zest
  • 1 cup Heavy cream full-fat for creamy texture
  • 1/2 cup Parmesan cheese, grated freshly grated
For Garnishing
  • 1/4 cup Fresh parsley, chopped or basil, chives

Method
 

Preparation Steps
  1. Boil a large pot of salted water. Add pasta and cook until al dente, about 8-10 minutes. Reserve pasta water, drain, and set aside.
  2. Pat the chicken dry, season with salt and pepper. In a skillet, heat olive oil and sear chicken for 4-5 minutes on each side until golden and cooked through. Transfer to a cutting board and rest before slicing.
  3. In the same skillet, melt butter and sauté garlic until fragrant. Add lemon juice and chicken broth; simmer for 2-3 minutes.
  4. Lower heat, stir in heavy cream and Parmesan until smooth. Add lemon zest and mix.
  5. Combine drained pasta and sliced chicken in the skillet, gradually add reserved pasta water until desired consistency is reached. Season with salt and pepper.
  6. Plate the pasta, top with chopped parsley and extra Parmesan if desired. Serve immediately.
