Preparation Steps
- Boil a large pot of salted water. Add pasta and cook until al dente, about 8-10 minutes. Reserve pasta water, drain, and set aside.
- Pat the chicken dry, season with salt and pepper. In a skillet, heat olive oil and sear chicken for 4-5 minutes on each side until golden and cooked through. Transfer to a cutting board and rest before slicing.
- In the same skillet, melt butter and sauté garlic until fragrant. Add lemon juice and chicken broth; simmer for 2-3 minutes.
- Lower heat, stir in heavy cream and Parmesan until smooth. Add lemon zest and mix.
- Combine drained pasta and sliced chicken in the skillet, gradually add reserved pasta water until desired consistency is reached. Season with salt and pepper.
- Plate the pasta, top with chopped parsley and extra Parmesan if desired. Serve immediately.
