  • 2 Avocados ripe
  • 1 cup Light Sour Cream reduced-fat version preferred
  • 1 tablespoon Lemon Juice freshly squeezed
For the Crunchy Layers
  • 1 cup Mini Roma Tomatoes drained
  • 1 cup Mini Cucumbers drained
  • 1 medium Red Onion finely minced
For the Toppings
  • 1/2 cup Danish Feta crumbled
  • 1/4 cup Toasted Pine Nuts
  • 1/4 cup Fresh Parsley finely chopped

Method
 

Layered Avocado Dip Preparation
  1. Prepare the Base Layer by spreading hummus evenly in a glass dish.
  2. Mash the avocados with lemon juice until creamy and spread over the hummus.
  3. Layer on diced tomatoes, cucumbers, red onion, feta, and pine nuts.
  4. Spread sour cream evenly over the veggie layer.
  5. Top with remaining tomatoes, cucumbers, feta, and pine nuts.
  6. Serve immediately with assorted crackers, pita chips, or veggie sticks.
