- Preheat your oven to 400°F (200°C). Slice off the top of the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
- Wash and chop fresh spinach. In a skillet, heat olive oil over medium heat, add spinach, and sauté for 2-3 minutes until wilted. Season with salt and pepper.
- Once the garlic is roasted, squeeze the cloves into a bowl, mash until smooth, and stir in ricotta, half of the mozzarella, oregano, salt, and pepper.
- Spread the garlic-ricotta mixture over the pizza crust, layer sautéed spinach on top, and sprinkle remaining mozzarella and feta cheese.
- Bake the pizza for 15-20 minutes until the crust is golden-brown and cheese is bubbling. The aroma will signal it's almost ready.
- Let the pizza cool for a couple of minutes, then garnish with fresh basil leaves before slicing and serving.
